Ingredients

  • 2–4 slices of bread (your choice: sourdough, rustic, whole grain, white — whatever you prefer)
  • Tomato sauce or pizza sauce (enough to spread over the bread)
  • 150–200 g mushrooms (sliced)
  • 120–150 g shredded or sliced cheese (mozzarella, cheddar, or mix)
  • 1 small onion (optional), thinly sliced
  • 1–2 cloves garlic, minced (optional)
  • Olive oil or butter for sautéing mushrooms
  • Salt and pepper, to taste
  • Optional extras: dried oregano or Italian herbs; chili flakes; fresh basil or parsley; sliced olives; bell pepper slices

Instructions

Step 1: Prepare the Topping

Clean the mushrooms and slice them. If using onion and garlic, slice/mince them too. In a skillet, heat a little olive oil (or butter) over medium heat. Add the mushrooms (and onion/garlic if using). Sauté until mushrooms are softened and most of their moisture has evaporated — about 5–7 minutes. Season with salt and pepper.

Step 2: Toast or Prep Bread

Preheat your oven (or toaster‑oven/grill) to around 200 °C (about 400 °F). Place the bread slices on a baking tray (or grill rack). Spread a thin layer of tomato/pizza sauce on each slice, then add a generous layer of sautéed mushrooms on top of the sauce.

Step 3: Add Cheese & Extras

Sprinkle or layer the cheese over the mushroom-topped bread slices. Add optional extras if desired: a pinch of oregano or Italian herbs, chili flakes, sliced olives or bell peppers.

Step 4: Bake / Broil

Place the tray in the preheated oven or under the grill. Bake or broil for 8–12 minutes (or until the cheese is melted and bubbly, and edges of the bread are crisp). Watch carefully to prevent burning.

Step 5: Serve Hot

Remove from oven, optionally top with fresh herbs (basil or parsley), and serve immediately while the toast is warm and the cheese gooey.
