- 1 tbsp olive oil
- 3–4 mushrooms, sliced

- 1 tortilla wrap (soft, flexible)
- 50 g mozzarella cheese, grated (or cheese of your choice)
Instructions
Step 1: Sauté Onion & Mushrooms
In a skillet over low to medium heat, melt butter with olive oil. Add the sliced mushrooms and julienned onion. Cover the pan, stir occasionally, and cook for about 5–7 minutes until the mushrooms are tender and onions caramelized. Season with salt and pepper to taste.
Step 2: Add Eggs & Herbs
Pour the beaten eggs over the sautéed mushrooms and onions. Sprinkle the chopped parsley on top. Let the eggs start to set for a minute or two.
Step 3: Add the Tortilla
Place the tortilla wrap over the egg mixture and cover the pan. The heat will gently steam the tortilla and help the eggs set without turning dry.
Step 4: Flip & Add Cheese
Once the eggs are set (but still slightly moist on top), carefully flip everything so the tortilla is now on the bottom.
